Quick Chilli Garlic Spaghetti | Sanjeev Kapoor’s simple Italian comfort bowl

Inspired by the classic Italian aglio e olio, the dish relies on a few fresh ingredients rather than an elaborate ingredient list

Sometimes, the best meals are the simplest. A handful of pantry staples, good olive oil, fresh garlic and perfectly cooked pasta can come together to create a dish that feels both comforting and elegant. That philosophy lies at the heart of chef Sanjeev Kapoor's chilli garlic spaghetti—a recipe that proves restaurant-style pasta does not require complicated sauces or hours in the kitchen.

Inspired by the classic Italian aglio e olio, the dish relies on a few fresh ingredients rather than an elaborate ingredient list. Thinly sliced garlic is gently cooked in extra virgin olive oil until lightly golden, releasing its sweet, nutty aroma without becoming bitter. Fresh red chillies add a clean, lingering heat, while chopped parsley brings brightness and colour. Parmesan cheese lends a savoury richness that ties everything together, creating a pasta that is light yet deeply satisfying.

What makes this recipe particularly appealing is its speed. With preparation taking less than five minutes and cooking completed in about half an hour, it is ideal for busy weekdays, late dinners or occasions when comfort food is needed without much planning. Unlike cream-based pasta dishes that can feel heavy, this version lets each ingredient shine while keeping the flavours balanced and fresh.

The secret to getting the dish right lies in the technique rather than the ingredients. The garlic should be sautéed gently over medium heat until just golden, allowing the oil to absorb its flavour without burning. The cooked spaghetti is then tossed directly into the fragrant oil so every strand is coated evenly before parsley and seasoning are added. A final drizzle of olive oil and a generous shower of parmesan complete the dish just before serving.

The recipe also offers plenty of room for personal touches. Those who enjoy more heat can add extra fresh chillies or chilli flakes, while mushrooms, sautéed vegetables or grilled chicken can transform it into a heartier meal. Whole-wheat or gluten-free spaghetti can easily replace traditional pasta without changing the cooking method, making the recipe adaptable to different dietary preferences.
